Banker Turns Baker To Help Coeliac Father And Wins Contract With SPAR
Denise O’Callaghan quit her high-flying investment banking job in London when her father was diagnosed as a coeliac and started a new career as a baker – now she’s baking cakes for SPAR.
SPAR are launching a new own brand gluten-free range of cakes and brownies, all made by Denise in her bakery in Little Island, Co Cork.
Denise explained, “When my dad was first diagnosed as a coeliac he was worried he wouldn’t be able to eat any of the food he used to enjoy any more, especially cake. I was working as an investment banker in London and I’d always been a great home baker so I started trying to make cakes for him myself. At first it was a disaster, but I kept trying until I got the recipes right.
“Then I started thinking about all the other coeliacs who couldn’t get anything nice to eat. I really believe that just because you’re on a restricted diet you shouldn’t have a restricted food experience.”
Denise quit her job to become a full-time baker and now she’s making delicious gluten-free own brand cakes and brownies for SPAR. All products are also wheat free and dairy free. With SPAR Gluten Free Chocolate Brownies for €1.39, SPAR Gluten Free Lemon Loaf for €2.99 and SPAR Gluten Free Chocolate and Orange Loaf for €3.49, they’re good for your health and your wallet.
